Guilt Free Muffin Recipe!

We know kids love to snack! After having two children herself, Melissa Latimore our Dental hygienist, has found ways to provide her kids with healthy snacks. Her go to recipe is a healthy apple muffin which are made with no refined sugars and are both delicious and guilt free! Why not give them a go and pop one in your child’s lunch box.

Apple Oat Muffins:

Dry ingredients

1 3/4 cup oat flour.

2 tsp cinnamon

2 tsp baking soda

Pinch of salt

Wet ingredients

1/2 cup coconut oil

1/2 cup Apple purée

1 tsp apple cider vinegar

1 tsp vanilla

Squirt of honey (optional)

Handful of Sultanas

1 grated apple

Method

1. Preheat oven 180 degrees

2. Mix dry ingredients in a mixing bowl.

Flour, cinnamon, baking soda and salt

3.In a small saucepan melt coconut oil and add the rest of the wet ingredients vanilla, honey and apple cider.

4.Create a well in the dry ingredients and pour your wet ingredients into the dry ingredients

5. Add the water, grated apple and sultanas.

Mix really well

6.Spoon the mixture into muffin cases.

7.Bake for 30-40 mins at 180 degrees or until muffins spring back slight when touched.

8. Enjoy!!
